I made a delicious quinoa salad last night. It has avocados and almonds and a ‘lemon cumin vinaigrette’.
I doubled the recipe and it made enough for about 10 people. Only change was that I used dried cranberries instead of apricots and I didn’t double the avocado. Anyways, it was totally delicious. And quinoa is super healthy, like UNBELIEVABLY healthy. So you should try it. It was really good, seriously.
Oh, but i would make more dressing for the amount of quinoa you make. like make another half-recipe of the dressing, it was a bit dry.
